Birthday cake for babies

Let us remember that children under 2 years of age should not consume sugar in their diet, so we should try to offer foods that do not contain it. Avoiding sugar consumption in this period will help reduce the risk of diseases including tooth decay, known at this stage as early childhood caries, which can cause a significant loss of tooth structure, pain and infection.

 

That's why I'm sharing with you a healthy cake option, suitable for babies, we made it at home to celebrate last Children's Day.

 

For the bread:

 

1 cup whole wheat flour

1 cup almond flour

4 eggs

1 tablespoon vanilla

2 tablespoons baking powder (we use non-aluminum)

1/2 cup date paste (just soak 8 dates 8 hours before, let them hydrate and then remove seeds and blend in food processor)

1/2 cup almond milk

1/2 cup coconut oil

 

For the frosting:

1 cup unsweetened Greek yogurt

Drops of vegetable coloring ( color of your choice).

 

To prepare:

Sift the flours to make the bread fluffy, meanwhile in the processor or blender (I used blender in processor mode) mix eggs, vanilla, coconut oil, milk, baking powder and date paste, once mixed add little by little the flours until you get a homogeneous mixture. Once the mixture is ready, pour it into a bowl previously greased with coconut oil and bake at 180 degrees for 45 minutes (I used a convection oven). Allow to cool.

 

To decorate: 

Divide the cup of Greek yogurt in as many portions as colors you want to use to decorate (I divided in 5), mix the yogurt with each drop of coloring (add as many drops as you require to obtain the desired color), use a spatula to place the yogurt, mix the colors if you wish and refrigerate 15 min and it is ready to serve. This was my first cake.
